Rice Pilaf with Octopus TRATA and Candied Onions
    Ingredients
  • 1 can of TRATA octopus piquant
  • 300 gr of Carolina rice
  • 100 gr of orzo
  • 750 ml of very hot vegetable broth
  • 50 ml olive oil
  • 1 bay leaf
  • alt and pepper
  • 1 lemon
  • Fresh herbs
PREPARATION
Preparation Time:5O minutes

Preheat the oven to 200º C. Use two small baking dishes that can fit in the oven at the same time. Warm the dishes well in the oven. In a bowl, mix together the onions, olive oil, vinegar, sugar, salt, and pepper. Put them in one of the hot baking dishes and bake for 25 minutes, until the onions have become soft, darkened in color, and developed a sweet taste. Put the orzo, rice, the very hot vegetable broth, the olive oil, bay leaf, salt, and pepper in the other baking dish. Stir well and cook in the oven for 20 minutes together with the onions that have already been baking. After 20 minutes the rice will have softened. If needed, add a little more hot broth. Add the lemon zest and juice to the onions. Serve the rice pilaf with the candied onions and the octopus.
