Eggplant with Herbs and TRATA Smoked Tuna, by Eleni Psyhouli
    Ingredients
  • 2 cans of TRATA SMOKED TUNA, drained
  • 4 eggplants, cut into large forkfuls
  • 1 onion cut in thin slices
  • 2 cloves of garlic, finely chopped
  • 1 tablespoon of dried coriander, beaten
  • 2 tablespoons of finely chopped fresh oregano or 1 teaspoon of dried oregano
  • 5-6 branches of parsley, finely chopped
  • 5-6 branches of fresh basil, finely chopped
  • 1 cup of olive oil
  • Salt
  • Pepper
PREPARATION
Preparation Time:10 minutes

In a large non-stick skillet, warm the olive oil and sauté the onions until they wilt. Add the eggplant and salt; stir patiently until they become soft. Add the garlic and coriander and keep cooking. At the end, add the TRATA SMOKED TUNA and herbs, stir carefully, and serve with freshly ground pepper. Tip: If you find fresh marjoram, add 1-2 branches. It’s an ideal fit!
