Tabbouleh with anchovies oregano TRATA
    Ingredients
  • 2 cans of anchovies oregano TRATA
  • 200 gr groats
  • 200 gr warm water
  • 2 lemons (juice and zest)
  • 1/2 cup of olive oil
  • 2 finely chopped tomatoes without seeds and skin
  • 1 finely chopped cucumber without seeds
  • 1/2 finely chopped onion
  • 2 finely chopped scallions
  • 200 gr finely chopped parsley
  • 100 gr finely chopped spearmint
  • 1/2 tsp sumac
  • 1/2 tsp cumin
PREPARATION
Preparation Time:40 minutes

Leave groats in water until they get soft. When it absorbs all the water it is ready. Strain any water. Mix the tomatoes, cucumber, onion, herbs and groats in a bowl. Add the oil, lemon juice and zest, salt and pepper. Mix and leave in the fridge until served. Serve with the anchovies, mixing gently so that the fish doesn’t fall apart.
