Sardines TRATA on ice with spicy herb sauce
    Ingredients
  • 1 package of Trata on Ice frozen fresh Aegean sardine fillets (400 gr)
  • 200 gr all-purpose flour
  • 200 gr oil for frying
  • 2 green onions, finely chopped
  • 100 gr parsley
  • 30 gr olive oil
  • 30 gr red wine vinegar
  • 1 clove of garlic
  • 1 spicy green pepper
  • 10 gr dried oregano
  • Fresh rocket (arugula)
PREPARATION
Preparation Time:25 minutes

Let the sardines thaw to room temperature. Place the green onions, parsley, olive oil, vinegar, garlic, spicy green pepper, and oregano in a blender. Blend briefly until everything is finely chopped. Set the sauce aside in a bowl until needed. Dry the sardines and cover them in flour. Pour the oil into a skillet and heat to a high temperature. Place the sardines in turns. Fry them for three minutes on each side and turn them over with a fork. The sardines are done when golden brown. Serve the sardines on the rocket (arugula) leaves with the sauce on top.
