Salad with black-eyed peas, beets and smoked tuna TRATA with lemon and oregano
    Ingredients
  • 2 cans of smoked tuna TRATA with lemon and oregano (160g)
  • 200 gr of black-eyed peas
  • 150 gr of zucchini
  • 150 gr of boiled beets
  • 100 gr of sweet red peppers
  • 100 gr of sliced black olives
  • 2 whole fresh green onions, thinly sliced
  • 100 gr (one bunch) of finely chopped parsley
  • Salt and pepper
  • For the Sauce:
  • 30 ml of oil from the tuna
  • 30 ml of olive oil
  • 10 ml of vinegar
  • Juice of 1 lemon
  • Salt and pepper
PREPARATION
Preparation Time:30 minutes

Boil the black-eyed peas in plenty of salted water. Make sure that they soften without becoming mushy. Drain them and let them cool down. Boil the zucchini in plenty of salted water until they become soft. Pour cold water on them to cool them and slice them. Slice the beets. Open the tuna cans, drain them, and keep their oil. Add the ingredients of the sauce to a salad bowl and mix until a uniform sauce forms. Add the black-eyed peas, zucchini, beets, peppers, olives, green onions, and parsley to the salad bowl. Mix well and then add the tuna.
