Pita Bread with TRATA Tuna and Cucumber, by Eleni Psyhouli
    Ingredients
  • 1 can of TRATA tuna in olive oil, drained
  • 4 Greek pita breads
  • 1 large cucumber
  • 2 fresh green onions, finely chopped
  • 4-5 branches of parsley, finely chopped
  • 1 cup of salted Valencia peanuts
  • Zest of 1 lemon
  • For the sauce:
  • 4 tablespoons of mayonnaise
  • The juice of 1 lemon
  • 2 tablespoons of olive oil
  • 1 teaspoon of vinegar
  • 1 tablespoon of sugar
  • 1 teaspoon of paprika or red pepper flakes
  • Salt
PREPARATION
Preparation Time:10 minutes

Mix the peanuts in the blender very briefly. Cut the cucumbers in two diagonally without peeling them, remove the seeds with a spoon, and dice in a bowl. Add the tuna, the peanuts, the green onions, the parsley, and the lemon zest. Mix the sauce ingredients thoroughly in a bowl and gradually add to the salad with small movements. In a non-stick skillet, warm the pita breads on both sides. Spread the salad onto the bread. Tip: Alternatively, you can use Arabic pita bread or tortillas
