Baked artichokes with dry tomato, olives and anchovies TRATA
    Ingredients
  • 2 cans of anchovies TRATA
  • 12 artichokes
  • 50 gr. dried tomatoes
  • 50 gr. Kalamon olives
  • 1 chopped onion
  • 2 chopped scallions
  • 4 tbsp olive oil
  • Salt, pepper
PREPARATION
Preparation Time:1 hour

Clean and cut the artichokes in quarters. Clean and finely chop the scallions and the onion. Cut the dry tomato in fine stripes. Remove the core from the olives and cut them in half. Open the cans and separate carefully the anchovy fillets. Frizzle the vegetables in olive oil with the anchovy sauce. Add the dry tomato and the olives, salt and pepper and cook for 15 minutes. Add the anchovies and mix. Place the mixture in a baking tray and cook in preheated oven at 160ºC for 45 minutes.
