Aubergine pasta with croutons and smoked tuna
    Ingredients
  • 2 packs (160 g) smoked tuna TRATA
  • 1 pack (500 g) whole grain pasta
  • 1 large aubergine, diced
  • 6 whole grain toast bread slices, diced
  • 2 cloves of garlic, chopped
  • Fresh thyme for serving
  • Salt and pepper
PREPARATION
Preparation Time: 25’

Bring a large pot of salted water to a boil. Add the pasta and cook according to the packet instructions. Open the cans of tuna and save the oil to bake the aubergines. Preheat the oven to 200ºC. Place the aubergine cubes on a single layer in a baking sheet and drizzle with little tuna oil. Season and cook for about 15 minutes until golden brown. When ready add the diced bread and mix. Cook for 10 additional minutes or until the croutons are crispy. When the pasta is ready, drain and toss with the remaining tuna oil. Serve the pasta placing the aubergines, croutons, tuna and thyme on top. Bon appétit!
