Roasted sardines with oregano and groats
    Ingredients
  • 1 pack (400g) fresh frozen Aegean sardine fillets TRATA on ice
  • 2 tomatoes, sliced
  • 50g small black raisins
  • 5g dried oregano
  • 30g olive oil
  • For the groats:
  • 200g groats
  • 200g boiling water
  • 50g lemon juice
  • 50g olive oil
  • 1 onion, finely chopped
  • 3g carry
  • 3g cinamon
  • For serving:
  • Fresh coriander
PREPARATION
Preparation Time:30'

Let the fillets reach room temperature, then pat them dry with paper towels. Preheat the oven to 180°C. In a baking sheet arrange half of the tomato slices in a single layer, place half of the sardine fillets on top, add the raisins, and layer the remaining tomatoes and sardines. Sprinkle with oregano, drizzle with olive oil and bake for approximately 20 minutes until fork tender. Prepare the groats. Place the groats in a bowl, cover with boiling water and let soak for 20 minutes. Drain, if there is any water left. Let cool. Add the lemon juice, olive oil, onion, carry and cinnamon and mix to combine. Add coriander or fresh herbs. Serve the groats placing the sardines on top.
