Roasted anchovies with samphire
    Ingredients
  • 1 pack (400g) fresh frozen Aegean sardine fillets TRATA on ice
  • 20g olive oil
  • 10g smoked paprika
  • 5g cumin
  • 5g carry
  • For the mayonnaise:
  • 100g mayonnaise
  • 100g Greek yogurt
  • Fresh dill
  • For serving:
  • 8 toast bread slices cut in half
  • 100g samphire
  • Cornichons cut in half
PREPARATION
Preparation Time:25'

Let the fillets reach room temperature, then pat them dry with paper towels. Preheat the oven to 180°C. Whisk the olive oil, paprika, cumin and curry in a bowl. Put the anchovies in the mixture and toss to coat. Line a baking sheet with parchment paper and lay the fillets without touching one another. Roast for approximately 15 minutes until the anchovies are golden brown and crispy. Prepare the mayonnaise by mixing all ingredients together. Toast the bread. Spread mayonnaise at each slice, lay on the anchovies, samphire and sprinkle with dill.
